Unagi (Japanese grilled eel) speciality restaurant, Unagiya Ichinoji’s first-ever overseas outpost opened in Singapore circa April 2018 at Riverside Village Residences. The second outlet will be nestled in Suntec City’s Eat At Seven as Unagiya Ichinoji Dining, joining the other restaurants in regaling gourmands with an authentic Japanese gourmet experience. It’s signature dish – the Hitsumabushi is Nagoya’s style of cooking eel, and there are three ways to eat it. First, divide the bowl into four portions. Enjoy the first portion on its own and relish the eel’s depth of flavour. Then, for the second portion, add nori (seaweed), wasabi and green onion to the Hokkaido rice and eel. For the third portion, add the clear dashi to the abovementioned mix. The final portion can be enjoyed however you like.

At Unagiya Ichinoji Dining, you can also pair the dishes with two special homemade unagi sauces. The Japanese unagi sauce is made with a higher shoyu content, and hence has a saltier and more robust note. Specially tailored for locals, the Singapore unagi sauce has a sweeter note.
