When one door closes, another opens – literally. After putting up the shutters for both Osteria and Pizzeria Mozza on 27 July, Marina Bay Sands reopens Nostra Cucina in the same space on 1 August. They’ve also done some refurbishing, so the new concept will sport a refreshed look.
The kitchen, helmed by the same chef and team, will be rolling out well-loved Italian pastas and hearty pizzas. Peter Birks, executive chef says: “My team and I are looking forward to unveil a new chapter at Nostra Cucina (meaning: ‘Our Kitchen”). I’m sure the synergy we have built as a team over the years will enable us to deliver an authentic Italian experience that will excite diners.”
Apart from offering classic regional Italian cuisine, Birks will be preparing some of his favourite recipes, such as confit duck leg with spiced cous cous and kumquat mostrarda, campanelle with prawn and lobster-infused tomato sauce, torta flambee fizza with smokey bacon, sour cream and onions, as well as kale salad with green apple, raisins and pine nuts. Many of these dishes are family recipes and tweaked further based on his years of experience working in the kitchens in US, Australia, Hong Kong and Singapore. The culinary team will introduce new dishes such as Tuscan bean and cavolo nero soup, and sand crab with avocado, iceberg lettuce and gazpacho. Luscious desserts such as chocolate tarts and cakes are whipped by executive pastry chef Ariana Flores.
Drinks-wise, the restaurant boasts an impressive wine list consisting of more than 700 labels handpicked from 20 Italian regions. Aside from Tuscan wines such as Tignanello labels and unique wines such as Brunello di Montalcino, the list offers a bevy of biodynamic and organic wines. There’s also selection of Nostra Cucina’s house-made citrus liqueurs to sip after dinner.
