Hold on to your seats! The soon to be re-launched Raffles Hotel Singapore has unveiled  its new line-up of dining experiences, fusing the hotel’s well-known culinary traditions with contemporary concepts by renowned celebrity chefs. Diners can finally look forward to these culinary ‘firsts’ when the iconic hotel reopens.

Bar & Billiard Room (BBR) continues to evolve with a new chapter by acclaimed Chef Alain Ducasse. The top-notch French chef will be presenting his first Mediterranean sharing and grill concept in the world. At BBR by Alain Ducasse, dishes inspired by Mediterranean tables: Portugal, Spain, Italy and France, will be showcased. Expect a range of sharing plates and regular-sized dishes at this convivial spot, which features an open kitchen with charcoal grills and wood-fired pizza ovens. There will also be a lively bar and lounge that will serve a selection of cocktails, beers, and wines. Brunch fans will be pleased to know that The Raffles Sunday Brunch will return when BBR by Alain Ducasse opens.

Anne-Sophie Pic, one of the world’s top female chefs with three Michelin stars, will make her Asian debut with a brand new restaurant in Raffles Hotel Singapore. La Dame de Pic will showcase the venerable chef’s search for aromatic complexity, combinations of flavours and powerful tastes that evoke emotions.

The wine list in particular offers a wide international base that leans towards the French regions, with a particular focus on Anne-Sophie’s birthplace, the Rhône Valley. There will also be cocktails, whisky, sake, tea, coffee, dashi, broth and consommés to savour. Located in the hotel’s dining room at the Main Building, the contemporary chic restaurant is beautifully designed with a graceful and soft palette.

The talented master chef Jereme Leung who has worked in various top restaurants in Singapore and Shanghai returns to our shores with yì by Jereme Leung. This contemporary Chinese restaurant will be located on Level 3 at the newly restored Raffles Arcade.

From Cantonese classics to adaptations of China’s ancient delicacies, Leung will be showcasing single sourced and seasonal ingredients with a contemporary approach. The restaurant is designed with modern sophisticated detailing and a soft white palette to blend seamlessly with the grand colonial architecture. Look out too for an immersive multi-sensory dining experience in the Experience Room with poetic dishes curated to evoke all five senses.
