Carlton City’s Honey-Turmeric turkey ($138, 5.5kg) is a juicy, fragrant roast slathered with a sweet-spicy sauce. Also pick up the Apple-Cinnamon Marmalade, which has a fresh, sweet quality that elevates it above the usual cranberry sauces.

Antoinette’s chef Pang has given a unique spin to festive staples with a Coffee Glazed Ham ($65, 1kg). Available only as a festive takeaway, the ham is brined in-house for 24 hours before it’s roasted and glazed with a coffee syrup at intervals of seven to eight minutes for two hours. The aroma of the coffee perfectly permeates the ham, offering a bittersweet flavour that complements the savoury nature of the pork loin. The ham also comes with a fragrant pineapple pilaf rice and achar salad. Unlike the usual achar that’s pickled, Antoinette’s rendition is made with a house-made sauce and tossed, allowing the vegetables to remain fresh and crunchy.

From Sofitel Singapore City Centre’s executive chef Jean-Charles Dubois comes a limited edition turkey ($138) that remains true to traditional flavours. Dubois’ handcrafted recipe is a honey slow-roast turkey infused with the fragrance of black truffles and rosemary. Served with homemade liver pâté, trumpet mushrooms, sautéed potato lyonnaise and berries jus, it comfortably feeds seven to nine guests.

An Asian remix of a quintessential Western festive dish, Bakerzin’s Gochujang Capon ($46, 1.8kg) is marinated overnight and stuffed with minced chicken, herbs and spices. Roasted to a crisp golden brown, the chicken is served with both gochujang (Korean hot chilli paste) and raisin sauce. The gochujang sauce is simmered for hours with concentrated chicken essence before herbs and spices are added. Made using only golden raisins, the raisin sauce is a Christmas classic, offering a complementary sweetness of flavour to the tender chicken.

A unique spin to the usual fare is One Farrer’s Signature Salt Encrusted Turkey ($148). Staying true to the hotel’s farm-to-table philosophy, the turkey is encased in a housemade salted crust dough and marinated in thyme and oregano, freshly harvested from their on-site urban farm. Each turkey comes with chestnut herbs stuffing, roasted new potatoes, seasonal vegetables, cranberry sauce, and pan gravy.

Ham is a hot favourite with young and old alike – after all, it’s hard to go wrong with such a mouth-watering dish that has easy, comforting flavours. Award-winning RWS executive pastry chef Kenny Kong from Sessions has come up with these adorable, delightful mini cakes ($82 per box of five), which are shaped like Christmas ornaments, and each one is modeled after the style of RWS’ five celebrity chef restaurants. The bright red ornament represents Osia Steak and Seafood Grill, and is flavoured with vanilla macadamia, red fruits nougat, strawberry crisps and red velvet biscuit, while the white ornament is styled for Italian joint Fratelli, with Italian meringue and tutti frutti cream. The chocolate ornament represents Ocean Restaurant by Cat Cora, with sea salt caramel and peanut crunch; while a ginger chocolate ornament with osmanthus mango jelly has Asian flavours inspired by Forest 森. An affogato is an Italian pour-over coffee dessert with a scoop of ice-cream (often vanilla). At The Affogato Bar, however, the Italian favourite is given a unique Yuletide twist. With the theme “Home for Christmas”, new ice-cream flavours include the Toffee and Gingersnap ($17.50 for a pint), the Smokey Road ($17.50 for a pint) and the Cherry Bianca ($19.50 for a pint) – perfect as festive desserts at your Christmas dinner. Tucking into t he Toffee and Gingersnap is akin to eating a gingerbread in ice-cream form; only better, due to how well the warm spiciness of the gingersnap pairs with the subtle sweetness of toffee. The Smokey Road recalls the flavours of toasted s’mores by the fireplace, with chewy marshmallow bits hidden within a luscious chocolate ice-cream, providing a sweet surprise in every bite. The Cherry Bianca, meanwhile, is all lush, Christmas elegance with dark pink swirls of cherry in cream and a fruity, clean finish. With its shiny, galaxy-inspired appearance, this beautiful cake is sure to be the stand-out at any Christmas dinner. On the inside, there’s luscious, decadent filling of dark chocolate mousse, bitter chocolate butter and dark cherry. It tastes as tempting as it looks, and it looks very tempting indeed.

Log cakes don’t just have to look good, they have to taste amazing. Fortunately, Marriott has both down pat. Their Coffee Praline Dulcey Yule Log ($68, 1kg) has a smooth, outer layer of almond dacquoise sponge wrapped in an aromatic white coffee chocolate mousse. This Yule, Ritz-Carlton’s culinary team has come up with an array of five different logcakes, each one representing a distinct taste (sweet, salty, sour, bitter and umami). Conceived by pastry chef Benjamin Siwek, the vibrantly coloured yule logs are guaranteed scene-stealers at any dinner. The ‘bitter’ Grapefruit Logcake is made of pink grapefruit jelly, nougat mousse and madeleine biscuit; subtly flavoured without being overpowering. ‘Sweet’ is the perfect descriptor for the Rose & Lychee Logcake, made of fresh raspberries and macaronade biscuits. For ‘salty’, Ritz Carlton has produced a Sea Salt Caramel flavour, while the ‘sour’ Mango & Passionfruit is for those who appreciate a bit of tartness in their desserts. Pan Pacific’s Pacific Marketplace has not one, not two, but three new logcake flavours this year! Their Chendol Log Cake has delicious layers of gula melaka mousse, azuki red beans, coconut panna cotta and pandan sponge to replicate a local dessert favourite.
